DEV - Create Unit Test for auth routes

Fill out the jest test suite for auth routes. Test each route and all of the status codes and errors.
The test can be found in backend\src\auth folder.

Test each method in the auth service object, and when you see a database call, make sure you mock the call with what you would want back from the database.

This ticket is a bit harder; you will need to mock Amazon Cognito as well.

The user folder has an example test made with the mocking behavior and examples of how NestJS does testing with format and a couple of methods. For more info on nest testing docs, follow this link testing. The setup for the test is already there; you just need to do the actual logic of the test.
