We used to have Azure build and deploy to dev on every merge to main so we know it can do stuff like this. I wonder if we could get it automatically build and deploy to UAT when a tag is pushed? Then all you need to do is manually deploy the same artifact to prod when ready. Maybe pushing a tag to the repo could trigger a GH action to make a release as well? So your steps become:

Current Release process has lot of manual steps involved.
If we can automate it, it would allow us to release more often and whenever we needed and with multiple teams.
As far as I know Github & Azure is already integrated.
Logging into Azure can't be automated. But once in Azure, we should be able to cut the release, tag it , generate release page, and deploy to dev & uat can be together with an single action.
Prod deploy can be another action that comes on demand.
