I figured it out, have to edit /boot/extlinux/extlinux.conf instead of /etc/default/grub |

The two tricks that I know from X86 land...
(select older kernel from GRUB menu)
(edit /etc/default/grub)
Don't appear to work in the case of an OrangePi5B running ubuntu-rockchip 24.04
I've recently run into an issue where I suspect it was caused by a newer kernel package... How could I revert to an older kernel to validate?
