PROTON_PREFIX environment variable

I'm thinking that it would be good idea to have a environment variable to tell Protontricks to look in the give directory as a proton dir. Like the STEAM_COMPAT_DATA_PATH variable for proton.
This would enable to work on non Steam games in a easy way.
