Found by try and error:

AppProcessesToClose = @(@{ Name = "C:\Program Files\Microsoft SQL Server Management Studio 21\Release\Common7\IDE\Ssms.exe"; Description = 'Microsoft SQL Server Management Studio' })

Variables are still not working in these paths.
