Hi!

Thanks for this! I was using the itzg vanilla docker images to run minecraft servers for my kiddos. They wanted to invite some Bedrock using friends to play, and I needed a docker image of PaperMC. Here we are. Thanks!
I start my docker images up with docker-compose and a yaml file, which I find much easier. Would you like me to contribute the documentation for that?
