ChickenSkewers peanutbutter sauce veggies and rice

Peanutbutter sauce

Ingredients:

  • 400 gr peanutbutter
  • 400 ml coconut milk
  • 1 table spoon of honey
  • 1 chili pepper
  • 2 cloves of garlic
  • 1 tea spoon of grated ginger
  • Af few splashes of soy sauce
  • Af few splashes of fish sauce
  • Af few splashes of supreme dark soy sauce
  • Af few splashes of oyster sauce
  • Af few splashes of lime juice

Instructions:

  1. Melt the peanutbutter in a pan, au bain marie
  2. Add the coconut milk and stir until smooth
  3. Add the honey, chili pepper, garlic, ginger, soy sauce, fish sauce and lime juice
  4. Stir until smooth

Rice

Ingredients:

  • 1 Part rice
  • 2 Parts water
  • 1 tea spoon of salt
  • A crushed garlic clove

Instructions:

  1. Put the rice, water, salt and garlic in a casterole.
  2. Bring to a boil for 3 minutes.
  3. Keep the lid on the casterole and let it rest for 10 minutes.
  4. Fluff the rice with a fork.

Veggies

Ingredients:

  • Mangetouts
  • Carrots
  • Bell peppers
  • Mushrooms
  • Mini corns
  • Broccoli
  • Spring onions
  • 3 Garlic cloves
  • Ginger grated, about 2 cm²
  • Soy sauce
  • Fish sauce
  • Oyster sauce
  • Supreme dark soy sauce
  • Corn oil / peanut oil
  • Chili flakes

Instructions:

  1. Cut the veggies in bite size pieces
  2. Heat the oil in a wok
  3. Add the garlic, ginger and chili flakes and stir fry for a minute
  4. Add the veggies in order of cooking time, starting with the ones that take the longest to cook:
    • carrots
    • broccoli
    • bell peppers
    • mangetouts
    • mushrooms
    • mini corns
    • spring onions
  5. Remove the veggies from the wok and set aside
  6. Add the soy sauce, fish sauce, oyster sauce and supreme dark soy sauce to the wok and stir fry for a minute
  7. Add the veggies back to the wok and stir fry for a minute

Chicken Skewers

Ingredients:

  • 1 kg chicken thighs or breasts
  • Home made Chinese marinade
  • Peanut oil
  • Skewers

Instructions:

  1. Put the chicken in the freezer for 30 minutes, This makes it easier to cut the chicken
  2. First soak the skewers in water for at least 30 minutes.
  3. Cut the chicken in bite size pieces.
  4. Put the marinade and the chicken in a ziplock bag, let it marinate for at least 30 minutes in the fridge.
  5. Put the chicken on the skewers.
  6. Heat the oil in a pan and fry the chicken skewers until done.
  7. Serve with the peanutbutter sauce, rice and veggies.
