Adjusting shadows to medium or above can cause the game to crash.

I have managed to set the shadows to Ultra once, so there seems to be some way of navigating this menu, but I've been unable to change the shadows to high/ultra since.

Adjusting Shadow Settings still causes the game to crash as of build 0.7.4.3

Can you test with the latest, I've pushed another fix in 0.7.5. It's tough to diagnose this since I'm having trouble repro'ing the issue
