Make Politeness Documentation More Readable / Fix Typos

Currently, the documentation for the politeness features simply lists out the columns for the features, without a definition / explanation of what they are:

Additionally, there is a typo in which the list of features (under "Interpreting the Feature") has the column names incorrect. The column headers are off by one, which does not match the original table.
