I have the same issue, but very rare. It seems to depend on how stable your connection is. I put mine very near to the pool (have a garden shed right next to the pool). It also happens after restarting home assistant. I use 2 automations to solve this problems:

I am very grateful for your project and I use it daily. Platform ESP32, whirlpool 28462. Thank you for your great work.
I have observed that time to time the communication between whirlpool and ESP freezes. Signals sent through home assistant don't make any response by spa. Thermometer shows 162 deg C (see the screenshot). All I can do is to go and manually reboot (switch off and on power supply). After restart it works again like a charm.
I don't know if I am the only to have such issue or there is some pitfall in the code itself. Maybe something linked to ESP32 or something linked to 28462.
Temporarily I have solved it by inserting Sonoff S26 remotely switchable power socket. But in any case it would be great addon to be able to have function to remotely restart the ESP/Arduino.
