Tests & examples refresh for new DX (JSON helpers, callbacks, cancel)

Add/refresh examples and table-driven tests to cover the new helpers and semantics.

Acceptance criteria

• New examples: structured output, image helpers, streaming callbacks.
• CI runs with -race, covers cancel test, and ensures deterministic arg rendering for ConfigOverrides.
