Enable Audit Service/OpenTelemetry for user observability? #80

Is your feature request related to a problem? Please describe.
Currently there is no clear way to determine basic user + system information like:
- Number of users using the system
- What functions/pages are being used the most
This information would be helpful for prioritizing developer tasks to better fit the actual use-case of our users.
Describe the solution you'd like
Would it be possible to enable the Audit Service or OpenTelemetry (alongside our current Splunk logger) to better observe core system functionality?
