Consider adding options.created primarily for test suite purposes

This option would allow clients to set/not set a created date, including passing null to ensure no default date of now is used. Production use cases should probably only set created in proofs via the configuration/default config of an issuer instance -- and an issuer configuration should be able to prevent overrides from the client via options.created.
