Various fixes

I've made a bunch of PR to improve the gem :

• Bump to minitest 6.0 #362
• Add support for Rails 8.1 #361
• Add support for Ruby 4.0 #360
• Add simplecov gem #363

You can merge them one by one in this order but it will need a rebase between each merge or merge the last one which contains 2 more commits :

• feat: add simplecov gem
• Fix Ruby 4.0.0 upgrade - unexpected graceful shutdown #364
