[BUG] Remove `imagemin-gifsicle`

Describe the bug
The imagemin-gifsicle package was causing issues on installation (ddev and docker; not important). When investigating I saw that the package was last updated 5 years ago.

Looking into the Emulsify code, I don't see it being used. Here is a search for imagemin and the only time imagemin-gifsicle comes up is in package.json.

Can we remove this if it isn't being used?
