it looks like their are stale docs on github pages

figure out why they stopped
and the best way to get them started back up

Just to add a bit more info here:

There's a GitHub action called pages-build-deployment that last ran 6 months ago. Then there's another action called GitHub Pages that seems to run against every PR and merge into main. It looks like the GitHub Pages action should be publishing to http://sdk.docs.entropy.xyz/, but it's not.

Not sure what workflows and actions should be running still.
