Update MacOS configuration to use skaffold patches instead of repeating the configuration

The skaffold configuration file https://github.com/eoap/dev-platform-eoap/blob/main/ogc-api-processes-with-zoo/skaffold.yaml duplicates the configuration. Instead it should use patches as described here: https://skaffold.dev/docs/environment/profiles/#override-via-patches
