Updated Flow Tests

After spending some time in this repo & reviewing the tests, it's clear that as of recent weeks there are two main test files:

1. clarity-bitcoin_test.clar
2. clarity-bitcoin_segwit_test.clar

Both of these files have eight (8) & seven (7) tests respectively written in Clarity. The goal here to is add at least 5 - 10 more flow tests, ideally each testing different transaction formats & limitations (such as < 8 inputs/outputs etc.)

Preliminary work has been done on a local branch to provide documentation on how to write these tests.
