Updating app_metadata

I'm not quite understanding how to update `app_metadata`.

I see how it's being updated in `identity-signup.js`, but that is a supplied function from Netlify. How would I update `app_metadata` in a custom function? How is the `testing-webhook` function called?

Is there something I'm not understanding?
