A few ideas

I looked around a bit on the web to see if there were some templates from which we could draw inspiration. Here's what I found:

World Development Indicators

App: https://ksimi.shinyapps.io/WDI_map_app/

This is probably the closest to what @dariomeili had in mind for the project? The structure of the app is straightforward and could be implemented quickly. The code can be found here: https://community.rstudio.com/t/world-development-indicators-on-a-world-map-2020-shiny-contest-submission/60211

Based on the above app some useful features could be added from the following applications:

Global Sales

This map features a very useful function where you can download the visualised data directly from the app.

Press Freedom

This app is the most advanced in terms of layout of this list and includes useful tabs that not only project the data onto a world map, but also work with bar charts and time series.

Live Weather

This app creates a live world weather map, which updates the data hourly via the OpenWeatherMap API. Probably this is not necessary in our case, but nevertheless the tutorial is interesting to see what would be possible!

Thanks @bonschorno , I agree, the first link looks a lot like what I envisioned.
