Describe the feature you'd like and what it will do

Upgrade Pydantic to version 2.5 and Django Ninja to version 1.1

Why is this feature important?

This update may require some refactoring of our API. It would be best to do so sooner than later to take advantage of new features, security updates, and performance improvements.
