Inability to support JSON-to-parquet conversion not clearly documented

I need to write on-topic JSON records to COS in parquet format.
I tried using this IBM COS Sink Kafka Connector but it repeatedly failed.
Upon consultation with an IBM Event Streams SME, we came to the conclusion that only json-to-json and parquet-to-parquet is possible with this IBM COS Kafka Connector.
But the documentation isn't clear that this is a constraint.
Recommend that the documentation clearly state this limitation.
