Make numba optional dependency #138

I am running into issues over at https://github.com/jbusecke/cmip6_preprocessing/runs/6178882386?check_suite_focus=true, that seem to be related to a numba dependency from xarrayutils (not confirmed yet...).

I should make that fully optional as it is only needed for a few functions.
