How are you supposed to exclude folders in a non-supervised install?

I've tried to use both backup and backup.full and backup.partial services to backup my docker installed version of HA, but the resulting trace shows that "Error: Partial backups (e.g. include/exclude) are not supported on non-supervised installations."

Is this something which is absolutely impossible to do due to the architecture? How are people actually doing backups and excluding, for example, media folder? I've got GB's of video footage from security cams in my media folder so I really can't be doing a back up of that every x amount of time.
