Ingredients
Spice Mix
Toast and grind with a spice grinder:
- 5 dried red chiles
- 1.5 Tbsp coriander seeds
- 2 tsp cumin seeds
- 1/2 tsp black peppercornes
Curry Paste
Blend:
- Spice mix
- 5-6 garlic cloves
- thumb of ginger
- bit of turmeric
- 2 sweet onions
- 1 tbsp cashews
- bit of water
Soup:
- 2 tbsp oil
- 8 curry leaves
- 3 tbsp chickpea flour
- 400ml coconut milk
- 1 lg carrot, thickly sliced x 1-2 cups mushrooms, quartered
- 1 bell pepper, diced
- 2 stalks lemongrass
- Veggie stock 750ml
- lemon juice
- 2 tbsp fish sauce
- 1 tbsp soft brown sugar
