Ingredients

Spice Mix

Toast and grind with a spice grinder:

  • 5 dried red chiles
  • 1.5 Tbsp coriander seeds
  • 2 tsp cumin seeds
  • 1/2 tsp black peppercornes

Curry Paste

Blend:

  • Spice mix
  • 5-6 garlic cloves
  • thumb of ginger
  • bit of turmeric
  • 2 sweet onions
  • 1 tbsp cashews
  • bit of water

Soup:

  • 2 tbsp oil
  • 8 curry leaves
  • 3 tbsp chickpea flour
  • 400ml coconut milk
  • 1 lg carrot, thickly sliced x 1-2 cups mushrooms, quartered
  • 1 bell pepper, diced
  • 2 stalks lemongrass
  • Veggie stock 750ml
  • lemon juice
  • 2 tbsp fish sauce
  • 1 tbsp soft brown sugar

Garnishes (all optional):

  • baby samosas
  • lime wedges
  • boiled noodles
  • sev
  • coriander
  • fried onions
  • fried garlic
  • fried ginger
  • medium-boiled eggs, chopped
  • chiles
  • green onions
  • chile oil
  • roasted cashews
