Stolen succinctly from Alton Brown:
- 3 eggs
- 1 tsp mayo
- 1 tsp harissa
- salt to taste
- butter!
- whisk together eggs, mayo, harissa and salt until evenly combined
- get pan up to 380 F, 195 C and turn off heat
- get some butter in that pan and coat
- as soon as butter melts, toss in your egg mix
- count to ten, stir with rubber spatula, then count to 5
- done!
