Enable volume expansion capabilities in e2e testing

In order to write e2e tests for #263, we would need a different CSI driver to be available in the Kubernetes flavor that we use to run the tests.
This CSI should allow expansion on host path volumes.
Ideally, this should work with Kind, but other K8s runtimes should be considered if that cannot be worked out.
