Old image version

Hey folks,

I'm using fluent-operator for the first time so I've found this guide helpful, but I wanted to let you know I got stuck for way longer then I'm proud of because of part of the guide.

In the fluent-bit only config (https://github.com/kubesphere-sigs/fluent-operator-walkthrough?tab=readme-ov-file#fluent-bit-only-mode) the example manifest uses the image "kubesphere/fluent-bit:v1.8.11"

I copy/pasted this and then spent way too long wondering why it was acting like the opensearch plugin wasn't present - i'm guessing it didn't exist at the time.

Not sure how y'all want to maintain things like that, just sharing my experience, do with this what you will. thanks for the guide.
