Desired behavior

update the docs/rich_text_editor.md file to document the editor now that it's complete in place.
also delete the docs/markdown_editor_viewer.md file since this component is nowhere to be found now and has been replaced completely.

Documentation should cover libraries used/implementation plan and an explanation to any not-so-straightforward parts of the code

Current behavior

the docs/rich_text_editor.md file contains some deocumentation that isn't up-to-date with the current state of the editor
