Would it be something like this?

    public function addStockData($observer) {

        $object = $observer->getEvent()->getObject();
        $variables = $object->getVariables();
        $product = $observer->getEvent()->getProduct();

        /* Get or change some data here */
        $variables['newcolumn'] = $value;

        $object->setVariables($variables);

    }
