Add CODECOV_TOKEN to CI to avoid ratelimiting issues when publishing coverage report

Currently most of the components do not use a token when publishing the coverage report to codecov.io, this means we run into rate limiting:

Also starting from v4, tokenless uploading is no longer supported: https://github.com/codecov/codecov-action?tab=readme-ov-file#v4-release

We should add the CODECOV_TOKEN to CI to make sure this works again
