We've made this migration guide to help migration from SDK version 2 to version 3.

It doesn't say anything about the client part, how do I create a form that can launch the payment process?

At the section "Step 3: Update Methods" of the migration guide you can see how to launch the payment process at version 3.0.0 of the SDK.
