This sounds very much like the issue is to be found in the prod environment. Check version first, then check that the data returned by the API are similar, using one of the tools from the "troubleshoting" section in the documentation |

In order for a property to be used in the "Sort settings" it must be marked as sortable in the schema, in most cases this is done by mapping the crawled property to one of the existing RefinableString/RefinableDate etc. |

Based on the questions you ask I must assume that you are not familiar with SharePoint Search, and I will recommend teaming up with a colleague or consultant with knowledge about the subject. Search is a complicated issue and not something you can be guided through in a support forum. |

My team created pnp search web part in the sharepoint page.
