vmm_tests: servicing version checks

Investigate why override_version_checks flag is needed for servicing to succeed on Hyper-V tests. Also add a check to verify that the expected version of OpenHCL is running, as the test will appear to succeed if the version check fails even though the VM silently did not perform servicing.
