Remove node 20 support

Additionally, there are a lot of Array.from sprinkled across the code simply because es2024 is not included and iterable didn't have map defined before that. I think node 22+ supports es2024 fully and that could also be added to the tsconfigs, leading to a lot of Array.from cleanup.
