chore: v2 documentation

The rendered documentation is in the repository. It doesn't need to be there and can be rendered + deployed from within the gh actions pipeline.
Also, the documentation must be updated for v2

AC:

• docs/ is gone
• adapt pipeline to render&deploy docs from master into gh-pages branch
• add v2 documentation: changes, reasons & migration path
