Reduced Dependencies?

Hi Team,

Just trying out the "Quick Start" locally via docker-compose up and noticed there are a whopping 10 dependencies (including the software itself). If I were to stand this up now in my self-hosted infra for a little side project, this would be overkill.

Is there any flexibility in the no. of external dependencies here?

This thing is already using up >1GB of memory and CLickhouse and Kafaa are consuming a fair bit of CPU and we're only (so far) IDLE. This is too much!
