Update all examples to Crosswalk for AWS 1.0

Ensure we are using 1.0 versions of awsx, eks and aws-apigateway in all examples.

Having updated examples for AWSX 1.0 would be awesome and much appreciated! 🙏

I found it a bit challenging to get started with Pulumi because a lot of the official TypeScript examples wouldn't even compile due to changes in the library.

Apart from the mentioned aws-ts-hello-fargate repo, some examples I stumbled upon include Running Containers on ECS Fargate and Building and Publishing Docker Images to a Private Amazon ECR Repository.
