- 1/2 cup butter
- 1/4 teaspoon salt
- 1 cup flour
- 4 large eggs
Preheat oven to 400 degrees. In medium saucepan, slowly bring 1 cup water with butter and salt to boiling. Remove from heat, With wooden spoon, beat in flour all at once. Return to low heat, continue beating until mixture forms a ball and leaves side of pan. Remove from heat. Beat in eggs, one at a time beating after each addition, until mixture is smooth. Continue beating until dough is shiny and breaks in strands. Drop by rounded tablespoons 2 inches apart onto ungreased cookie sheet. Bake until puffed and golden brown, 45 - 50 min. Puffs should sound hollow when lightly tapped with fingertip. Let cool completely on wire rack, away from drafts. With sharp knife, cut off tops crosswise. Scoop out any filaments of soft dough, Fill with CREAM PUFF - FILLING
