- 1 cup uncooked long grain rice
- 1/2 cup chopped onion
- 1/4 cup butter
- 2 1/4 cups chicken broth
- 1/2 cup chopped green bell pepper
- 1/2 cup diced celery
- 1 1/2 cups bite size cut chicken breasts cooked
- 1 - 3 oz. can drained mushrooms
At medium heat brown and stir rice and onion in butter. Add broth, green bell pepper and celery. Cover and cook for 10 to 15 min. until rice is tender, stirring occasionally. Add cooked chicken and mushrooms and pour everything into a 1 1/2 quart covered casserole dish.
