IO implementation for embedded-io #100
Description
With the release of embedded-hal 1.0.0 Serial trait has been removed in favor of using embedded-io. This issue proposes adding IO mocks as a preferred method over existing 'Serial' which is based on 'embedded-hal-nb'.
