If I do

Uni.combine().all().unis(UniA,UniB).combinedWith { a,b ->
 persist(new C(a,b))
}

It creates an Uni<Uni<C>> and I'm forced to use .flatMap { it }

No, if persist returns a Uni you need to flatten it.
