While we have an API documentation on the capabilities, there is currently no documentation on how we detect capabilities.

This might need to touch on information about Shell, Conosole, Terminal and ANSI escape codes.

#1292 mentions:

The docker log output is not an interactive environment so progress and similar will not work, so it falls back to safe rendering. This is by design.

something like this should probably appear in this documentation, too.
