Migrate app from CRA to Vite

As a sub-task of resolving dependency vulnerabilities, migrate the inventoryManagerUI app to use Vite instead of Create React App (CRA).

Tasks

• Remove CRA dependencies and configuration
• Set up Vite as the new build tool
• Update project scripts and documentation for Vite
• Ensure development and production builds work as expected

This migration will help address vulnerabilities and improve build performance.
