Docs: bundle resolver settings does not document settings

The bundles resolver docs list a number of configuration options and include some example values but no defaults. The docs link to the resolver's configmap as a reference for "defaults that the resolver ships with." However the configmap only includes two settings, default-kind and default-service-account, and the latter of the two is not even mentioned in the documentation.

There are two issues with this documentation:

• If there is a setting allowed on the configmap, it must be documented
• If the documentation mentions a setting, the documentation must either include the default value or the default value must be specified in the configmap linked by the documentation
