content-type="text" doesn't work properly #609

Describe the bug
when you set content-type="text", in some occasions, it will act like html.

To Reproduce
Steps to reproduce the behavior:

Go to https://codesandbox.io/p/devbox/suspicious-darwin-53l3lr
try to type a * followed by space
the text is converted to HTML.

Expected behavior
output plain text like quill itself

I know that the latest release is for 2023, just opening the issue so other people know
