Final security fixes - clean up all vulnerabilities

- Updated dashboard dependencies (0 vulnerabilities)
- Updated vite to v7.1.5
- Fixed all npm audit issues in dashboard
- Generated new package-lock.json files

This should clear most/all Dependabot alerts
