Update containers to use version 7.8.1 of Elastic stack #1

This PR updates the Docker containers to use version 7.8.1 of Elasticsearch.

All containers of the Elastic stack are updated to version 7.8.1. This is to provide workshop participants a local Docker setup with a more recent version of Elasticsearch. Most of the workshop examples only require a single Elasticsearch instance.

This disables the other two Elasticsearch containers in the Docker Compose configuration, mainly to avoid that users boot up all containers at once, when most examples require only a single ES instane.
