I am also experiencing some issues on my build:

…unctionality not applying until the theme tab in the settings was oepned, reverted the change to app.tsx, etc.

Made the changes that you requested @bacurrah I think I got them all fixed after some testing. All seemed good on my end, lmk if you still see any issues |

This includes the theme page you first see when you run the project, as well as all those themes in the theme tab inside the settings. The themes I added are light mode/dark mode, different fonts, and how much blur you want. The dark mode version is what we're already used to, so all I added was a light mode and you can swap between them.
