Now it saves date and time of when the script was run and the photo was taken to a log.txt file.

Now it searches for a photo taken at a time within 2 hours of the present time, starting from the present day and going back day-by-day until it finds one (up to 1 month). In this way it should not be stuck if the satellite does not upload new photos for a few days.
